Dear Sir/Madam
You may not be aware that the 2 Claridges menus you hold dated 1898 are Edouard Nignon's. He was Maitre Chef de Cuisine from 1894 -1901. He wrote 3 famous cookbooks and owned the Restaurant Larue in Paris.
